Stepmum Will Inherit It All

MY dad remarried but did not make a will. I am his only surviving son. His new wife is 15 years his junior and is likely to outlive him. He says everything will fall to me when she dies but is this the case?

NO, it is not and, if this is their wish, they should make wills accordingly. If your stepmother ultimately dies, you have no claim on her estate as you are not her biological child nor are you adopted by her. The estate would devolve to other members of her family under the Succession (Scotland) Act 1964.
