Q I saw a chef season meat before cooking but I thought you should never do this because it draws out moisture. Am I wrong?
A Salting meat too early draws out moisture, meaning the meat won't cook correctly. Season it just before it goes in to the pan.
Q I use dried or easyblend yeast when making bread but I want to try real yeast. Where can I get it?
A They don't advertise it but the bakery counter of a supermarket or anywhere that makes fresh bread should sell it to you by weight.
Q I'm vegetarian and love pumpkin but they are often hard to find.
What else can I try?
A The pumpkin season runs from September until December. At other times, try some of the large variety of delicious alternative squashes, such as butternut. Your local greengrocer can advise you on flavours, preparation and what is in season.
Q I keep seeing kirsch, listed in dessert recipes. What is it?
A Kirsch is a type of brandy made from morello cherries. It is delicious in desserts and makes a great base for a sauce for duck.
Q My greengrocer has started stocking baby turnips, which look delicious. How do I prepare them?
A They don't need to be peeled, simply wash them and trim the root off before boiling or roasting whole until just tender.
